MEATLESS MONDAY: SWEET POTATO AND FRESH CHILLI

FAVOURITE LONDON CAFE LUNCH: ROASTED SWEET POTATO AND CHILLI ON TOAST

So I bought a new plant. Chilli. It’s pretty neat. Especially when enjoyed with sweet potato…

After a few busy days sightseeing and partying (parents in town – woo!) I am feeling unbelievably-oh-so-extremely tired today, but I have to share this colourful quota of deliciousness, before I call it a day.

My favourite cafe round the corner from our old house in London serves this as one of it’s signature staples, and you guys… you’ve just got to trust me when I say: It is GOOD. Although their version is pretty near perfection on a plate, served simply with feta cheese, chilli and sweet potato, I have tweaked it a little, to  add some more colour and suit what needed to be used up in our fridge (!!).

Here’s what you need: Whole sweet potato, crusty bread, sliced fresh chilli from your new chilli plant in the garden, chives, cheery tomatoes and mozzarella cheese.

Here’s what you do: Roast your sweet potato in foil, for about an hour. Scoop out the soft potato, mash it up  with a few slices of fresh chilli, and spread over a piece of slightly toasted bread. Add tomatoes, chives and mozzarella, and place under the grill for a few minutes. Then… ENJOY! DSC_0056I should also mention that our good friend sweet potato here is not only very yummy, but also a great source of betacarotene, which helps prevent certain types cancer and mops up free radicals. A pretty cool vegetable, I’d say.

  1. I am MAD on sweet potato…roasted in coconut oil with a drizzle of maple syrup is possibly the best thing I have eaten in my life! Sometimes, I cut them in half and roast them and serve them topped with bolognaise and parmesan for a ‘pasta free’ dinner x

    • Oooh… wow. Maple syrup on sweet potato? Heaven.

      We do that with bolognese sometimes too! Works a treat!
