MEATLESS MONDAY: VEGETABLE COUSCOUS SALAD
TASTY COUSCOUS SALAD WITH VEGETABLES AND FETA
As you know, we’re BIG on simple, quick, yet über tasty meal options here on Best of 2 Sisters. So this week; Couscous! With vegetables and feta cheese. Oh, hello yum alert! Nice to see you.
Here’s what you need for 4 people; 300g couscous, 500 ml vegetable stock, 1 diced courgette, a couple of diced peppers in different colours, 1 chopped red onion, a handful of sliced cherry tomatoes and some crushed garlic cloves. A bunch of mixed lettuce leaves. Salt and pepper to season with. Oh, and feta cheese. Do not forget the cheese! 
Here’s what you do; Pour the stock over the couscous, stir with a fork and set aside for 10 min, by which time it will have absorbed the stock. Melt some butter in a pan, and sauté the onion and garlic, before adding the courgette and peppers. Sauté for a few minutes, before adding the tomatoes.
Remove from heat. Fluff up the couscous a little with a fork, then mix it all together, adding the green leaves and feta. Season with a little salt and pepper if you like. Lay the table, and call your mates – get ready to enjoy a tasty plate of meatless joy.

We´re not one of those people who can start food sections saying, “I’ve always loved cooking”. That would be a lie (Louisa lived off chicken tikka masala take away during student years, and Camilla, well… she just generally had issues with food, and spent half her life as a vegetarian for various non-obvious reasons).
