MEATLESS MONDAY: BUTTERNUT SQUASH AND FETA PASTA

YUMMY BUTTERNUT SQUASH AND PASTA DINNERĀ

I’m a fan of butternut squash. And feta too. And I’ve told you about my love for chilli, haven’t I? I could also eat pasta every single day, so this was a sure winner in my eyes, but I’d love to know if you’ve ever tried it?

Here’s what you need: 1 butternut squash, olive oil, garlic, sliced chillies (optional), feta cheese, pasta – we used wholewheat penne, but anything would work!

Here’s what you do: Peal butternut squash and cut into small dices, then spread them evenly out in ovenproof dish. Add oil, herbs or spices, and cloves of garlic, and roast in oven till they turn a yummy dark orangey colour, soft to touch. Boil pasta. Mix it all together with feta cheese – then serve it up!

If you’re brave enough, fresh chillies would be awesome with this dish. I found the inspiration for this yumster here, and here. You could add tomatoes, or nuts, too.

  3. This looks delicious. My daughter would be all over it! Squash and feta with pasta? That’s her idea of paradise!
